PATATAS EN ADOBILLO RECIPE
This popular Malagan recipe is not only very easy to make but it is also very cheap. It uses the most basic ingredients - potatoes, garlic, stale bread, and makes them into a surprisingly tasty, rich and full of flavour dish.
500 g potatoes - peeled and sliced into 1 cm thick slices
10 ml of olive oil
1 teaspoon of wine vinegar
3 cloves of garlic
1 teaspoon of sweet paprika (or 1 teaspoon of cumin)
1/2 teaspoon of black pepper
2 slices of stale white bread soaked in 10 ml of water (and squeezed)
Heat the olive oil in a pan over a medium heat. Add the sliced & washed potatoes, salt and fry them for 10 minutes on one side and 5 minutes on the other side. Make sure that they do not burn - lower the flame if necessary.
For the last two minutes, add 3 peeled cloves of garlic and fry on all sides until light brown. Remove the potatoes from the pan and remove the excess fat with a paper towel.
In a mortar, make a fine paste from a mixture of the stale bread ( without the water), fried garlic and black pepper.
Remove most of the oil from the pan, and put on low heat.
Add the ground paprika (and cumin), dissolve in the remaining oil (be careful not to burn the paprika).
Add potatoes, the paste from the mortar, 3 tablespoons of water, and mix everything carefully.
Add salt if necessary and wait for the liquid to evaporate. Remove from the heat and stir in a teaspoon of wine vinegar.
Serve with a meat dish or with fish.
